Ingredients:

Kataifi. 1 box
Oil
MTR Badam Powder.  1 packet
Milk

Kataifi is a very fine vermicelli-like pastry used to make sweet pastries and desserts. It is sometimes known as shredded phyllo. It is widely available in Middle Eastern stores like Neomonde. It is also called by other names like Kanafeh (Arabic), kadayıf (Turkish), kadaif (Albanian) and/or kadaifi (Greek).

Cooking Instructions:
Heat oil in a frying pan. Add Kataifi to the heated oil. Fry Kataifi till it is light brown in color. Take it out of oil and spread it on paper towels to absorb as much oil out as possible.

Follow the instructions on the MTR Badam Powder packet to make hot badam milk.

Serve well dried Kataifi on a shallow dish and pour hot badam milk over it.

Invite Sampige's Executive Committee for lunch and serve the dish.

goDDu huLi. ಗೊಡ್ಡು ಹುಳಿ

Ingredients:

 Uradh dhaal  - 3 Tbsp
Red chillies - 7-8
Black Pepper - 1/2 Tsp
Fenugreek Seeds - 1/2 Tsp
Corriander Seeds - 1 Tsp
Dry Coconut  -  1/2 cup
Curry Leaves - about 20 leaves
Rice - 2 Tsp

Jaggery, Tamarind and Salt - According to taste.

Any one of these vegetables - Raw Plantain,
Cucumber, Suvarna gadde, snake gourd, Sore kai.

 
ಉದ್ದಿನ ಬೇಳೆ  - 3 Tbsp
ಒಣ ಮೆಣಸಿನಕಾಯಿ - 7
ಮೆಣಸು - 1/2 Tsp
ಕೊತ್ತಂಬರಿ ಬೀಜ (ದನಿಯ) - 1 Tsp
ಒಣ ಕೊಬ್ಬರಿ - 1/2 cup
ಕರಬೇವು - 20
ಅಕ್ಕಿ - 2 Tsp
ಉಪ್ಪು
ಹುಣಸೆ ಹಣ್ಣು
ಬೆಲ್ಲ

ಯಾವುದಾದರು ಒಂದು -  ಬಾಳೆ ಕಾಯಿ, ಸೌತೆಕಾಯಿ, ಸುವರ್ಣ ಗಡ್ಡೆ, ಪಡವಲ್ ಕಾಯಿ, ಸೊರೆ ಕಾಯಿ.


Cooking Instructions:
Fry all the above, except jaggery, tamarind and salt, and grind it into a coarse powder.
 
Cook the vegetable . Add the ground powder and 1 cup  water  to it.

Add tamarind and salt.

Boil it for 15 mins.
 
Sesoning - heat oil , add mustard seed and hing.  Add this to the huLi
 
Eat with rice.

Ingredients:

  • 2 cup diced (small) vegetables - (Onion, Carrot, Cauliflower, Green beans, Peas)
  • Ginger ½ inch, Garlic 3 cloves, Green Chillies (5), Mint (optional): - Grind to Paste
  • Red chilli powder – ½ tbsp
  • Dhania powder – ½ tbsp
  • Jeera powder – ¼ tbsp
  • Garam masala – ¼ tsp
  • Corn flour – 2 tbsp
  • Olive oil  - 1 tsp and for shallow fry only
  • Oat – 1 ½ cup
  • Salt to taste
  • Water – 1 cup

Cooking Instructions:
  1. Heat 1 tsp. of the oil in a pan; Add jeera and wait till it splitters; Add onions and fry for 2 minutes.
  2. Add other vegetables (carrot, cauliflower, green beans, peas) and fry for 5 minutes.
  3. Add ginger, garlic, green chillies and mint paste and fry for 2 minutes.
  4. Add red chilli powder, dhania powder, jeera powder, garam masala and fry for 2 minutes.
  5. Add salt to taste and make sure vegetables are cooked.
  6. Add 1 cup of water to 1 ½ cup of OAT and microwave for 1 minute OR till OAT is softly cooked.
  7. Roughly mash the vegetable mix; add cooked OAT and mix well. Add salt for taste if needed.
  8. Make into small patties; Dip them in a corn flour; Shallow fry until golden brown.
  9. Serve hot with Ketchup or Green Chutney.

Chocolate Truffles (winner: Dessert category. Valentine's Day Party. Feb 2009)

Ingredients:
    • 1 lb Oreo cookies with chocolate cream (3 sleeves)
    • 6 ounces cream cheese, room temperature (plain)
    • 1 packet dark cocoa chocolate candy melt
    • 1/2 packet white chocolate candy melt
 
Directions :

Using a food processor, grind cookies to a fine powder. With a mixer, blend cookie powder, cream cheese and thoroughly mix. (there should be no white traces of cream cheese).

Roll into small balls and place on wax-lined cookie sheet. Refrigerate for 30 minutes.

Take a handful of candy melt dark chocolate in a glass bowl. Microwave it for 20 sec. and the chocolate will melt. Dip balls and coat thoroughly. With slotted spoon, lift balls out of chocolate and let excess chocolate drip off. Place on wax-paper-lined cookie sheet. Remember to melt chocolate in batches so it does not become hard.

In a separate bowl, melt white chocolate. Using a fork, drizzle white chocolate over balls. Alternately, you can pour the melted chocolate in a wax paper cone and seal it from the top. Cut the pointed portion of the cone just enough to let the liquid to drip. This way you can draw any designs that you need. Let cool. You can then place the truffles in baking cones after cooling and decorate and serve.


Vegetable Noodles

Ingredients:

  1. Maggie Noodles – 2 packets – select any flavor
  2. Tamrind paste -1 tsp
  3. Oil 5 Tsp
  4. Hing (if you like)
  5. Salt – as per taste requirement
  6. Fresh Vegetables
  7. Onion 1 large                                     
  8. Green Beans   - 10-12           
  9. Potato -1 medium
  10. Cilantra – few stalks               
  11. Carrot             - 2 small          
  12. Green Pepper – ½
  13. Fresh Ginger – small peice
  14. Frozen Peas  - ½ cup
  15. Garnishing (ಒಗ್ಗರಣೆ):   Mustard seeds, Curry leaves.

Cutting Vegetables:

  1. Crush the Ginger
  2. Onion – cut into  half and cut into thin slices vertically
  3. Green Beans – ½ cm pieces
  4. Carrots – ½ cm cubes
  5. Potato – ½ cm cubes
  6. Green Pepper – cut into small pieces.

Cooking Instructions:

       Noodles
  • Boil about 8 cups of water. 
  • Before opening the Noodles packet, Mash the Noodles
  • Put the mashed noodles into boiling water
  • Cook for about 10 minutes
  • Add 1 packet of masala(that comes with Noodles) and cook for 2 minutes
  • Drain the water.

      Vegetables

  • Heat oil in a big cooking pan
  • Add mustard seeds, Curry leaves, crushed zinger, Hing
  • After ½ minute add Cut onion
  • Once Onion turns yellow, add green pepper
  • After couple of minutes add Carrots
  • Add green beans
  • Add potatoes.  Cover and cook for 5 minutes

       Mixing it up

  • add masala and salt.
  • add tamarind
  • add cilantro
  • add cooked noodles and stir
  • cook for 5 minutes
